Slowly working towards building new recipes into the rotation!
1 onion, chopped
2 stalks celery
1 red pepper
2 lbs chicken (thighs are tasty but fatty, we use breasts)
1 lb sausage (kielbasa, or if you’re adventurous, andouille. the original recipe called for 1/2 lb, but I like more sausage)
1 15 oz can diced tomatoes
3 Tbs flour
3/4 teaspoon dried thyme
1/2 teaspoon garlic powder (or a couple cloves fresh garlic. I let them cook whole until the end then hunt them down and mash them)
1/4 tsp cayenne pepper
Salt and pepper to taste
I also tend to throw in a few hits of tabasco, but that’s me
Originally a crock pot recipe where you layer the onion, celery and pepper in the bottom of the pot, cover with chicken and sausage, mix the rest of the stuff in a bowl and then dump it over the top. Cook on low for 8 hours.
…or just toss it all in a pot and simmer for a good half hour to 45 minutes. Good with cornbread.
